After several days eating freeze-dried meals (Mountain House*) nothing is better than a home cooked meal fresh from the garden. Tonight’s menu included Thai Basil Beet Curry over Brown Rice.
To make simply boil some chopped beets and carrots in 4 cups of water, add some chicken stock or bullion (if you are adding liquid stock simply substitute in place of water.
Once beets are cooked add in a can of evaporated milk and some chopped zucchini.
then some green curry paste, Thai basil to taste (i like a lot!) and some fresh thyme.
once the zucchini cooked remove a 1/4 cup of stock and mix in some corn starch and add back to pot. Keep doing this until it is as thick as you want and then add in some salt to bring out the flavors.
